Have you ever dropped some eggs into a bowl of water and noticed that some floated while others sank? I'm sure that made you think 'what is going on and are these eggs any good'? Well, the answer is simple with a little understanding of some egg science. Eggs have a little space between the albumen (egg white) and the shell. This space called the air cell is, you guessed it, filled with air. This pocket of air is formed at the larger end of the egg and is a biproduct of the contents of the egg contracting as the egg is cooling after being laid. So naturally all eggs have a small air cell after they are laid. As we all know from elementary school science class, when something has very little air present (a rock) it will sink when dropped in water, whereas if something is filled with air (such as a balloon) it will float when dropped in water. This leads us to ask the question, so than how do some eggs float if the air cell is naturally small when it is freshly laid? The answer is a tad more complex. Egg shells are actually porous (shocking!), which means there are microscopic pores on the surface of the egg that allow microscopic activities to take place. Some of these activities include allowing gases and moisture (aka water) to pass through the shell. These activities happen slowly overtime, but because moisture is continuously passing through the eggshell the egg white (which is makes up 58% of the eggs contents and is 88% water!) starts to shrink. As the amount of egg white present within the egg decreases the pH of the interior increases. With a rise in pH we also get a rise of bacterial activity. Bacteria love a higher pH, and combined with a moist fatty environment, the party of a bacterium's lifetime can begin. As a result of the bacteria's nonstop partying the egg starts to go bad, and with more air present inside of the air cell, the egg will float if dropped in water. To sum it all up:<ul><li>All eggs have an air cell</li><li class="ql-indent-1">Fresh eggs have smaller air cells thus they sink</li><li class="ql-indent-1">Older eggs have larger air cells thus they float</li></ul> Keep this little scientific tid bit in mind when you embark on your next baking or cooking adventure and watch out for those bad eggs. Now that you understand the WHY behind eggs floating, you can dive into the HOW to make your next dessert or dish that much more amazing. All with a little sprinkle of science.
