My mother was one of the best cooks I have ever known in my life. She'd cook every meal for the family until she was hospitalized. After that, she didn't have the same capability to stand in the kitchen and cook for the family. That's when I had started to learn how to cook. At the time I had not been so into cooking until I started to experiment more with different recipes. Creating lighter and fresh items, with the same deliciousness and eaten without so much guilt. Also known as "vegetable fritters," this yummy snack can be served as an appetizer. Deep-fried onion, potato, spinach, and eggplant pieces are marinated with various spices, chickpea flour, yogurt onions, and cilantro This dish is served with a side of mint and cilantro chutney.

Vegetable Pakora

Lauki or bottle gourd is a delicious traditional Indian dish, that is sauteed with a blend of spices tomatoes and onions. This dish can be enjoyed with a side of bread or basmati rice.
