Origins of Enclave 

Welcome to Enclave Sourdough! My name is Dane Switzer and I started experimenting with naturally leavened bread in 2020. After a year or so of immense failure, I finally began to have some success. I learned to appreciate the highs and lows of sourdough baking; the myriad wins, the seemingly devastating losses. Through these failures and triumphs I fell in love with studying the science and artistry behind wild yeast cultivation &amp; artisan baking. This is a craft with bottomless depth, and I believe to be a sourdough baker is to be a student in perpetuity. I love to share food and my passion for bread, and I aim to help educate others on the importance of whole grains and knowing where our food comes from. Our experienced chef will guide you through a hands-on cooking experience, where you'll learn how to prepare a romantic and flavorful meal from scratch. You'll work together to chop, sauté, and season your way to a perfectly plated dinner that you'll both enjoy together. Our Date Night Cooking Class is designed to be interactive and engaging, and you'll have plenty of opportunities to ask questions, get feedback, and connect with others. It's a fun and social way to learn new cooking techniques, and you'll leave with the confidence and skills to recreate the meal at home. ($150 is for two people. class and food included in price.)

Get in Touch

To prevent your sourdough drying/staling, always store the bread with the cut side down. The exterior of the bread can almost act as a bag, keeping moisture in and dryness out. Refrain from refrigerating your bread as it will actually expedite the staling process. If you go through your bread rather quickly, even storing cut side down on a cutting board will do the trick. Paper bags, plastic bags &amp; airtight containers are all sufficient to keep your bread fresh for up to a week. For long term storing, slice bread and place a piece of parchment between the slices to prevent sticking and store in the freezer in a ziplock or vac pack.
