Guerilla Kitchen and Bakery began as a whimsical way to share photos of the food and joy that happened in our kitchen online. That included lots of google eye photos, and my journey into Sourdough Breads and Baked Goods. As time went on, I became confident enough in my bread to share it with others. After testing my market, I'm very excited to be offering freshly baked sourdough (including a Gluten Free Option!) to the Bellingham, WA community and beyond. Our model is simple. We deliver freshly baked bread directly to your home or work, or you visit our Saturday pop-up market at Hela Provisions. We’re there weekly between 1:00-4:00. The Classic - Rosemary Sourdough Bread

"The Jimmy" is named after the founder of my Sourdough Starter, Jim Page. He perfected it throughout his lifetime, and my starter dates back to the early 1970's, thanks to Jim. He was a traditionalist and loved a Basic Sourdough Loaf. This loaf honors him. Slow-fermented and hand-crafted, with a perfect golden crust and a moist, chewy interior. Made with love, with a traditional sourdough tang.

This isn't your traditional sourdough loaf! Open baked with a combination of whole wheat and bread flours, this traditional, two pound loaf has a softer crust and crumb that is ideal for sandwiches. Slightly less sweet than traditional cookies, with a slight savory overtone thanks to the rye. Heavy on brown sugar and made with real butter, sold by the half dozen, with the option to add pecans. Or opt to add brewers yeast to make them lactation cookies. New! Opt for Vegan &amp; Gluten Free. Heavy on Oat Flour, with some Almond Flour, Plant Based Butter and Aquafaba, these cookies are equally as delicious! Topped with Himalayan Pink Salt and Chocolate Chunks

Chocolate Chip Oatmeal Cookies with Sourdough and Rye

Our Cinnamon Roll Sourdough Focaccia is a masterful combination of sweet and savory, blending hearty sourdough flavors with the sweetness of a cinnamon roll. This exquisite focaccia is baked in a 8” square or heart shaped pan, and is glazed with four ounces of lemony joy. Topped with a bit of sanding sugar. Olive Oil gives the bread a crispy, chewy crumb, and Butter, Brown Sugar and Cinnamon add abundant sweetness reminiscent of a cinnamon roll. Truly an indulgence not to be missed!

My Gluten Free Sourdough starter is fed a combination of Teff, Buckwheat and Brown Rice Flours. Combined with Psyllium Husk, Potato Starch, Oat Flour, Bob's Red Mill Gluten Free All Purpose Flour, Buckwheat Flour, and more Brown Rice Flour, these nearly two pound loaves yield a nutty loaf that is still a bit dense but improving. Sweetened with a bit of maple syrup, the loaf has a surprising crumb which holds up well for sandwiches and toast. Completely vegan and GF. They are mixed, shaped and baked with due diligence. Each loaf is shaped into it's parchment paper, and remains in that parchment throughout fermentation and baking, until it is delivered to you. However, they are not recommended for people with severe Celiac Disease, because they are made in a kitchen that contains gluten. Tested extensively, people with gluten intolerance reacted very positively. My GF friends have access to Sourdough again!

These delightful sourdough rolls are enriched with butter and milk, making them slightly sweet with a distinctive sourdough tang. Soft enough to be perfect as dinner rolls, versatile enough to work for an easy weeknight dinner plan (Sliders!). Families love them. Baked in a 9" x 13" pan, and available as either whole or half pan. ***Only Available for Delivery at this point***

Our Focaccia starts with the same dough we use for our Pizza Crust. Enriched with Olive Oil, it yields a crispy, chewy crumb. Topped with more Olive Oil, Rosemary and Himalayan Pink Salt and baked in a 8" Square or a 9" x 13" rectangular pan. Our Focaccia offers beautiful lift with a crunchy exterior and soft interior. A truly decadent bread. Customize it! Choose from a variety of toppings to make your foccacia uniquely your own. Or choose Everything Bagel or Honey Butter for an entirely different spin on the classic.

My Sourdough Caraway Rye is a throwback to my childhood in New Britain, CT. It was a vibrantly ethnic city, with specialty shops and bakeries in every neighborhood. Each Sunday we would stop at Cousins' Bakery for a loaf of their Sourdough Rye. It had a crispy exterior and light, chewy interior. Dad would order it sliced, and we'd each get a piece as soon as we got back in the car. Cousins' Bakery closed decades ago, and I spent years trying to duplicate the rye bread of my childhood. Happily, I have succeeded, and I am excited to bring this lovely, light rye to the PNW! Complete with a crispy exterior and chewy crumb, studded with fragrant caraway, these loaves are baked in standard loaf pans. A slow, 18 hour ferment infuses them with rich rye overtones. The perfect bread for a Rueben, or simply to enjoy with butter.

Sourdough like you’ve never experienced it before! Cocoa Powder enriched dough, swirled with chocolate chunks and cranberries. Very slightly sweetened, with a distinctive tang. Slow fermented as always, and infused with love.

Light, Buttery Biscuit Dough is mixed, rolled and refrigerated, then delivered to you to bake. They’re best right out of the oven. Crisp on the outside, flakey inside. Made with 100% butter, an employing baking soda for rise and sourdough for flavor, these biscuits are like no other. I include baking directions. Easy and delicious!

Let me know by FRIDAY for Tuesday delivery next week.&nbsp;&nbsp;To place an order, send me a message or order and pay online.&nbsp;&nbsp;https://www.guerillakitchenandbakery.com A family segue: 2025 has been a heartbreaking year.&nbsp;&nbsp;As many of you know, my brother, who I’ve known and loved since I was 15 months old, came to live with me after my Mom died this past March.&nbsp;&nbsp;We all knew that he needed medical attention.&nbsp;&nbsp;I guess we just didn’t realize how quickly dementia impacts folks when they go through a major life transition.&nbsp; There was an incident last Tuesday that landed him at St. Joe’s.&nbsp;&nbsp;&nbsp;He’s been diagnosed with dementia (like my Dad) and managed care is necessary.&nbsp; My heart is breaking for the boy I’ve known since his birth.&nbsp;&nbsp;I’m spending three to five hours with him each day at the hospital, until we can get him into assisted living.&nbsp;&nbsp;This is harder than I could have ever imagined.&nbsp;&nbsp;Trying to keep my baby brother smiling, remembering, counting, tossing balls, naming NY Yankee Pennant Years (yes, he starts with 1921), while advocating for everything else.&nbsp;&nbsp;I’m not complaining.&nbsp;&nbsp;I always knew my brother would come into my care, and I’ve spent a life preparing for it.&nbsp;&nbsp;I didn’t prepare for the heartbreak.&nbsp;&nbsp;I couldn’t.&nbsp;&nbsp; Again, I say, love life.&nbsp;&nbsp;It is so brief and so precious ♥️
