A similar loaf to the Farmhouse Boule, but made with 100% unifine spelt flour. As an ancient grain it contains less gluten than regular wheat or all-purpose flour, and is slightly higher in fiber &amp; protein. It has a slightly nutty, robust flavor in comparison, and (as always) contains all the fermented sourdough goodness we know and love.

Welcome to Fire &amp; Breadstone! I'm Molly, and for as long as I can remember I have been cooking &amp; baking for my friends and family. I am passionate about creating food that is delicious, healthy, and appealing to all of the senses. My specialty is traditional sourdough bread created in small batches. I have dealt with food sensitivities for most of my life, which spurred my initial foray into sourdough back in 2014. I created a starter then, and it has accompanied me ever since. When I went through long stretches without a home base, I dehydrated a little starter and brought it with me (I'm a little crazy that way!). In 2022 my husband and I moved from Florida to Alaska. For the first time in my life I wasn't working a full-time job (previously I had been an insurance adjuster for catastrophes, traveling in leaps and bounds across the lower 48 to chase hurricanes and floods and disasters as they frequently cropped up). My life, which had been uprooted and chaotic before getting married, finally had some stability. It was wonderful to have some time off to regroup - but I cannot stand still for long to save my life, so after a few months I was looking for a new project to pour into. I was baking sourdough on a weekly basis for our own consumption, and decided to start advertising some extra loaves here and there - so Fire &amp; Breadstone was born.

Spelt Loaf

Soft. Pillowy. Sumptuous. Take the original milk-based sandwich loaf, add extra honey, a little whole wheat, &amp; toasted oats, and enjoy its sweet, hearty flavor. The long fermentation time (18+ hours) means you get all the good digestive qualities of the Farmhouse Boule, with the softness and tight crumb of white bread.

Focaccia

My original 4 ingredient recipe, tweaked to replace the water with birch sap. Each spring, during a short window of time before the green up, I tap my birch trees and collect the sap twice a day to filter and freeze. Birch sap is naturally inclined to ferment and compliments the sourdough process beautifully. It is also packed with minerals and vitamins such as magnesium, manganese, calcium, and potassium.

Birch Bread

Soft. Pillowy. Sumptuous. This milk-based bread is a delight any way you eat it: as a cold sandwich, as a grilled cheese, with soup and salad, or straight up toast with a slather of butter. The long fermentation means you get all the good digestive qualities of the Farmhouse Boule, with the softness and tight crumb of plain white bread.

Sourdough Sandwich Loaf

The original loaf that started it all! There are always only 4 ingredients: sourdough starter, water, flour, and salt. It is then fermented for up to 18 hours before baking into a crispy, chewy, deliciously sour round loaf.
